Bifrons Microbrewery: Tradition and Innovation in the Heart of Casentino
Located in Capolona, in the province of Arezzo, Bifrons microbrewery stands out for producing high-quality craft beers, the result of a family passion that has lasted since 2013. Founded by Filippo Colongo, the brewery began its activity with a self-built system, a symbol of a growth path marked by experimentation and recipe refinement. In 2016, the brewery was completely renovated with a professional system that ensured a significant increase in both production and beer quality.
The very name, Bifrons, evokes the figure of Janus Bifrons, the Roman two-faced deity, perfectly representing the dual soul of the beer produced here: tradition and innovation. Every stage of the process is carefully overseen by the Colongo family, from selecting raw materials to milling the grains, all the way to bottling and label design. A fully artisanal process carried out entirely within the brewery, telling the story of dedication and passion behind each bottle.
The Bifrons Craft Beer Range
Bifrons’ production spans several beer styles, all characterized by careful aromatic research and high-quality ingredients. Among the most appreciated beers are:
- La Bianca: a Blanche with a fruity and tart flavor, pale blonde and cloudy in color, with 5.0% alcohol by volume.
- Santana: Saison with an intense aroma and balanced bitterness, featuring 6.5% ABV.
- Sherwood: a light Pale Ale with a delicately bitter finish (4.8% ABV).
- Apanema: American Pale Ale with tropical and citrus aromas, typical of American hops (5.5% ABV).
- Progressive IPA: American IPA with a bold and intense taste, with fruity and citrus notes (6.0% ABV).
- Sunset: Dubbel with a malty profile and balanced sweetness, at 6.5% alcohol.
- La Catenaia: ale brewed with chestnuts dried in the traditional drying rooms of Casentino, with a smoky aftertaste (6.0% ABV).
- Sprout: intense Imperial Stout, with flavors of chocolate, coffee, and licorice, at 8.0% ABV.
The beers are available in 0.75L bottles, purchasable directly at the Capolona brewery or at the Bibbiena brewpub. For those seeking a more complete experience, the brewpub in the historic center of Bibbiena offers the chance to taste Bifrons beers accompanied by local specialties, such as grilled potato tortelli and Casentino gray pork Prosciutto, a product protected by Slow Food. The venue is open Wednesday to Saturday from 7:00 PM to 1:00 AM and every evening from June to August.
Bifrons regularly participates in food and wine events across central Italy, bringing the quality and passion of its beers beyond Casentino.
