In the picturesque area of Masi di Cavalese, immersed in the stunning setting of Val di Fiemme, Birrificio di Fiemme represents a Trentino excellence in the production of craft beer. Founded in 1999 by Stefano and Luisa Gilmozzi, this family-run brewery skillfully combines tradition and innovation, offering fine beers that tell the story and dedication of a family rooted in the territory.
The entire production process is based on the use of raw materials grown directly on the farm, starting from a hop field of 7,200 square meters where four varieties of hops grow:
- Hallertauer Tradition
- Perle
- Cascade
- Taurus
Alongside the hops, two-row barley is also cultivated with great care, ensuring a superior quality base for the beers. In recent years, the company has experimented with innovative production by planting 310 Solaris vines to create a limited-edition beer enriched with grape must, a concrete example of how tradition and experimentation meet.
The agricultural wealth also extends to the cultivation of cereals, mustard, tobacco, aromatic herbs, and bee-friendly flowers, essential for the production of the precious local honey called “Miel de Santa”. In addition, the company’s vegetable garden provides fresh vegetables for the restaurant of the attached farmhouse.
A Unique Range of Craft Beers and Local Hospitality
Birrificio di Fiemme offers an extensive selection of craft beers that skillfully reflect traditional brewing techniques, rewarding the palate with authentic and refined aromas. Among the beers to discover:
- Fleimbier Helles: a pale beer with a balanced character
- Larixbier Dunkel: a smooth, dark malt beer
- Weizenbier Weiss: the classic wheat beer with a fresh taste
- Nòsa Belgian Ale: a tribute to rich Belgian brewing influences

The experience at the brewery is completed by the farmhouse, where it is possible to enjoy a simple but carefully prepared menu based on high-quality local products. The menu includes platters of local cured meats and cheeses, sandwiches, snacks, and homemade desserts, all made with ingredients from farms in Val di Fiemme and Trentino. In addition to the beers produced on-site, selected wines, natural juices, herbal teas, syrups, and hot chocolates are available for tasting.
The adjoining shop allows you to take home a complete selection of beers, from the classic to the seasonal, as well as agricultural products such as artisanal mustard, honey, and buckwheat flour.
