San Michele Brewery: artisanal excellence at the foot of the Sacra di San Michele
The San Michele Brewery, located in Sant'Ambrogio di Torino, is a real gem in the Piedmont craft beer scene. Founded in 2010 by Bruno Gentile, a former IT professional who managed to transform his passion into a concrete project, the brewery is housed in a historic building dating back to 1860, once a knitwear factory owned by the Bosio brothers, skillfully restored to host both production and tasting experience.
The choice to maintain a completely artisanal method, without filtration or pasteurization, allows the creation of live beers with a unique character. A distinctive element is the use of pure water sourced from the surrounding mountains, which gives the beers that authentic and unmistakable flavor typical of the territory. Furthermore, a significant portion of the cereals used is grown and malted in Italy, while other special ingredients such as hemp, honey, and chestnuts come from local producers, emphasizing the brewery's focus on short supply chains and ingredient quality.

San Michele Brewery’s production spans various styles, with both top and bottom-fermented beers, each with a precise personality consistent with the brewery’s philosophy. An original detail is the choice to name each beer after a famous opera, thus highlighting the founder’s passion for music. Among the most beloved specialties are:
- Maria Stuarda: fresh and thirst-quenching, enriched with hemp flowers from Valsusa
- Norma: beer with a toasted character, enhanced by chestnuts
- Traviata: fragrant and sweet thanks to the addition of honey
- Aida: known for its delicate smoky notes
- Mimì: featuring citrus notes and a pleasant bitter aftertaste
