Their journey began with the renovation of an old estate in the center of Pisa, transformed into the characteristic Pub Orzo Bruno. At the same time, a 1000-liter production facility was established in Bientina, in the province of Pisa, which remains the beating heart of the beer production today.

Among them stands out Rosa Gravina, one of the first female brewers in Italy, with significant training experience including the Birrificio Lambrate in Milan.
