Aspide Brewery: Tradition and Passion in the Heart of Cilento

In the evocative territory of Cilento, in Roccadaspide, stands Aspide Brewery, an artisanal reality born from Vincenzo Serra’s passion in 2011. After years of home experimentation, Vincenzo decided to turn his dedication to craft beer into a concrete and quality project, which today represents a point of reference in the Italian brewing scene.

One of the most fascinating peculiarities of the brewery is its open-flame brewhouse, designed and built directly by the brewer himself. This traditional method allows for particularly intense and complex caramelizations in the wort, hardly replicable with more modern technologies such as steam systems. The production process then continues with fermentation in open vats, a technique that respects the millenary tradition of brewing and gives the beers a unique and authentic character.

A Research Laboratory that Enhances the Territory

Aspide Brewery pays great attention to the management and selection of yeasts, a fundamental component to ensure high-profile beers. It in fact has a small laboratory equipped with a microscope, a self-built propagator, and a yeast bank, including some strains isolated directly at the brewery. This commitment to research has allowed the creation of exclusive products, such as the Belle Saison, a farmhouse ale fermented with a native yeast strain.

The Belle Saison stands out for its floral bouquet and intense spicy notes derived precisely from the selected yeast, offering a refined and original tasting experience. It is not the only noteworthy offering: Aspide Brewery produces several beers ranging from Belgian to Anglo-Saxon styles, always with a keen eye on local brewing traditions.

Among the most appreciated creations are:

• Blonde – a golden ale with a delicate and harmonious taste, perfect for those who love light but well-structured beers;
• Gairloch – a complex scotch ale, with intense scents of ripe red fruit that add depth and character;
• Nirvana – a strong Belgian ale with a rich fruity structure and a dry finish that makes it surprisingly drinkable.
