The CaneNero Farm Brewery, located in Badia Agnano in the municipality of Bucine, in the province of Arezzo, stands out as one of the most authentic and innovative realities in the Tuscan craft beer scene. Founded in 2015, this microbrewery is based on a completely zero-kilometer production philosophy, a feature that makes it unique in its kind. Here, barley and wheat are grown directly on the gentle hills of Chianti Aretino, never resorting to the use of pesticides or chemical additives, to ensure a genuine product that is respectful of the environment.
Tradition and Innovation in Beer Production
The brewery's production process starts with the careful selection of raw materials, with barley grains malted internally with great attention. This phase takes place through the use of an ancient nineteenth-century steeping machine, a tool that masterfully combines tradition and craftsmanship. After germination, the barley is naturally dried and toasted in a fully handmade oven, thus giving the malt a unique and local character, defined by CaneNero as 100% native and agricultural.
The attention to quality is also reflected in the refermentation method: each beer is left unfiltered and naturally refermented in the bottle, without the addition of external gases, to preserve freshness, aromatic complexity, and the authenticity of its organoleptic characteristics.
