Toccalmatto Brewery: Brewing Innovation and Tradition in the Heart of Parma
The Toccalmatto Brewery, located in Fidenza, in the province of Parma, represents one of the most innovative and appreciated craft brewing realities in the Italian beer scene. Founded in 2008 by Bruno Carilli and three friends, this brewery immediately managed to combine a passion for traditional Belgian and British live beers with a creative and experimental spirit, becoming a point of reference both nationally and internationally.
Toccalmatto was born with a small 550-liter batch system, aiming to produce high-quality craft beers capable of enhancing raw materials and classic techniques. Over the years, growth has been steady: in 2015, the Toccalmatto 2.0 project was launched, featuring a new system eight times larger and a dedicated team, designed to meet the increasing demand from demanding markets such as the United States, Japan, and Australia.
An Authentic and Cutting-Edge Production Philosophy
Toccalmatto’s production is based on a process of top fermentation with natural refermentation, which ensures not only lasting freshness but also a continuously evolving taste over time. A distinguishing feature of this brewery is the central role of hops, carefully selected and used through innovative hopping techniques to create beers with a strong and aromatic character.
Among the most iconic creations is Zona Cesarini, a Pacific IPA distinguished by an explosion of fruity aromas, with intense notes of citrus and tropical fruits appreciated by connoisseurs worldwide. However, continuous experimentation is never lacking: Toccalmatto enjoys breaking traditional molds with unique products that surprise with balance and originality. An example is the Re Hop, a hybrid beer that combines the characteristics of a Golden Ale with those of an American Pale Ale, enriched with delicate notes of orange peel, grapefruit, and a refined herbal and spicy finish.
