Founded in 2020 as a practical extension of the Accademia delle Professioni, a nationally renowned institution for excellence in food & beverage industry courses, this brewery is a living laboratory where theory and practice come together to create high-quality products.
The brewery's mission is twofold and captivating. Among the brewery’s production lines, 'La Prima Cotta' stands out as a series of beers conceived as the students’ first brewing experience. This project is distinguished by innovation and quality and has already received significant international recognition.

La Prima Cotta - Mild: inspired by the British Mild style, this beer has a soft character with an alcohol content of 3.8%. Notes of caramel, hazelnut, and toasted malt emerge on the nose and palate, enriched by delicate nuances of plum, licorice, and chocolate. A product that has convinced experts and enthusiasts alike, winning a gold medal at the Brussels Beer Challenge in 2021.

La Prima Cotta - Märzen: a Märzen-style beer that combines tradition and innovation. Characterized by a perfect balance of body and aroma, this experimental beer was awarded a silver medal at the Concours International de Lyon in 2025.
