Birrificio Delle Cave: an emerging reality in the heart of Brusciano
In the lively landscape of Campanian microbreweries, Birrificio Delle Cave stands out for its story of passion, quality, and connection to the territory. Located at Via Padula 102/A in Brusciano, in the province of Naples, it was born from the enthusiasm of Marco Delle Cave, who since 2016 began experimenting with homebrewing beers with great success in homebrewing competitions.
The real turning point came in 2018 when, supported by his wife, Marco decided to turn his passion into a concrete project: the construction of the brewery. In December 2020, thanks to obtaining the operating license from the Customs and Monopolies Agency, Birrificio Delle Cave officially opened its doors, ready to offer craft beers characterized by careful and rigorous processing.
Artisan quality and controlled innovation
The brewery uses a well-organized facility, equipped with a brewhouse with a capacity of 200 liters of wort, which is then transferred to four fermenters for a total production of 1,600 liters. Every phase of production is meticulously cared for: from fermentation to bottling, which takes place in 0.33 cl and 0.75 cl bottles or in 5 and 20-liter kegs. Only when the brewmaster considers that the beer has reached the ideal maturation, the product is made available for sale.
One of the most interesting features of Birrificio Delle Cave is the choice to grow hops directly on owned land. This allows the production of a seasonal beer, an American Pale Ale, which is brewed every year around the end of September. The beer uses 100% malt cultivated and malted in Puglia and an Italian creamy yeast, a clear sign of attention to the short supply chain and the enhancement of Italian raw materials.
