Collerosso Brewery: Tradition and Innovation in the Heart of Borgorose
In the picturesque territory of Borgorose, in the province of Rieti, Collerosso Brewery was born, a microbrewery that represents the most authentic and experimental soul of Italian craft brewing. This project began in 2017 as a natural evolution of Birra del Borgo, a historic reality founded in 2005 that has profoundly influenced the national brewing scene.
The name Collerosso is inspired by an old dirt road, immersed in nature, that connects a promontory covered by the red leaves of a majestic oak tree to the inhabited center of Borgorose. This reference to wild nature is at the heart of the brewery’s production philosophy, which harmoniously combines artisan tradition and experimental spontaneous fermentation processes.
A Unique Process for Excellent Beers
The true heart of Collerosso is the characteristic Coolship, a large open vat where the wort is left to cool during the cool nights. Here spontaneous fermentation begins thanks to the wild yeasts present in the air, giving life to beers with a unique identity and inimitable character, far from standardized fermentations.
Subsequently, the beers are slowly matured in wooden barrels that previously hosted fine spirits such as:
- Brandy
- Montepulciano red wines
- Amarone della Valpolicella
This aging phase gives the beers complexity and depth, enriching them with scents that recall the aromatic notes of the woods and spirits that “dressed” the barrels. The passing of time is a fundamental ingredient that allows the beers to evolve, reaching a perfect balance between flavors and aromas.
One of the most emblematic creations is the Round Overnight, a complex blend that combines three spontaneous fermentations from different vintages (2015, 2016, and 2017), each aged in a different barrel. This beer fully expresses Collerosso’s vocation: a meeting of history, passion, and continuous brewing research.
Collerosso’s beers are recognized for their superior quality and their ability to reflect the terroir and cultural identity of the Rieti territory. For this reason, the brewery received the prestigious Slow Food Excellence recognition in the 2025 Guide to Italian Beers, an acknowledgment that highlights the commitment to carry forward an authentic and sustainable project.
